No internet and Curry Soup!

Sadly, I lost my internet service. My room mate was paying for it, but decided he did not want to spend the money on it anymore. I will be coming to the library or other various places to get on to keep blogging ( I am now truly addicted). But, I have realized that this is a blessing. When I get up now I go for a walk, rather then read blogs and fine things to waste my time online!

Dinner Last Night
Yesterday, I wanted to make a chicken stew type thing, but it turned into a sweet potato curry, it was delicious!
2 Large Sweet Potatoes
4 chicken breast
1 onion
1/2 bag of mixed frozen veggies
2 cloves of garlic
Piece of ginger about the size of your thumb
Palm full of chili powder
2 TB Soy sauce
1/2 cup of Soy Milk
2 TB flour
Salt and Pepper to taste
3 cups of water
Ms. Dash Italian Seasoning
2 TB Curry Paste
10 mushrooms cut in halfs
In the morning I peeled and cut sweet potatoes threw them in the bottom of my crock pot, added onions ( I cut in 4ths then cut those 4ths into 4ths). Add chicken Add seasoning and thinly sliced garlic, add frozen veggies, mushrooms and water. I started this about 11:45 and it was ready about 7 when I got home.

I then melted some butter in a stock pan and added flour and browned. I added my soy milk and let it thicken and worked out the clumps. I then scooped out my veggies and chicken draining the water as I scooped but you will need some of the water to thin out the sauce. I then drained the rest of the soup in the water and added those to the soup. I added the soy sauce, the curry paste, and chili powder, ginger. The sweet potatoes cooked down and were no longer chunks but added taste and color.

  1. Way to have a positive out look!! That soup sounds yummy!

  2. That soup sounds yummy. I may need to give it a try. :) Good job on getting up to do a walk! I need to take a page from you other competitors and get my butt in gear in the morning. It would be nice to get the exercise out of the way first thing.
